Nice surprise while putting a hurt on perch

Got this slimy guy today on perch tackle. Was an exciting couple of minutes and my PB gator. İ don't normally target them so i thought i caught a mamooth perch, until i've seen a giant silouhet (compared to perch of course) under the boat. He made a last ditch effort to go under the boat but to no avail. He's been released to fight another day.

And yeah perch fishing was awesome too with non stop action all afternoon. Took home a nice haul with good size eaters mixed with half dozen jumbos...

That probably wraps up my fall perch fishing. All 3 outings since late September was awesome.

Yup, will be heading to the stream next, was waiting for water levels to rise up a bit. Time to check my fav spots after this recent rain.

2 cups dark brown sugar,1/2 cup of salt, 2 tlb spoon of pepper, 8 cups of cold water. Let soak for 24 hrs,remove,lightly rinse,pat dry,rack and in the fridge for 24hrs uncovered, smoke 2 pans of mixed, apple and sweet maple for 7-8 hours. Depends on the texture you want. I like a dry jerky, but will get a bit of soft with the thicker meat parts.

Awesome, this looks pretty much like the recipe i use to smoke my fish. The only exception is I only use Maple chips. must try adding Apple too. I also like it a bit on the dry side, but it's a tricky balance as you said some parts of the fish are thicker than the others.
